Kuelap Fortress Peru to be restored

Get Your Outdoor Gear Here - Click MePENTUR (Peru’s National Tourism Strategic Plan) has revealed its five year plan to transform the archaeological fortress, Kuelap, located in northern Peru, into a leading tourism destination. Kuelap will undergo a series of improvements and restorations that will enhance the historical attractions of the country’s Northeast tourism circuit which encompasses the states of Amazonas, Cajamarca, Lambayeque and La Libertad and help to draw adventure seekers.

The most significant improvement to the iconic jewel of Kuelap will be the installation of a cable car that will reduce the time it takes travellers to get to the fortress from three hours to thirty minutes. In addition, the roadways, sewage system, signage, accommodations and walkways in the neighbouring cities in the Alto Utcubamba Valley where Kuelap is located, will be upgraded and renovated to further improve visitors’ stays. Environmental improvements to the surrounding areas of the fortress, restoration of previously deforested areas and rezoning efforts will also be part of the transformation.

The Kuelap fortress, situated in the district of Tingo in the Luya province of the Amazon region, was built by the Chachapoyas culture who inhabited the area in 550 AD. The expansive six hectares fortress is equipped with three defensive platforms and three narrow entrances that can only be crossed one person at time for strategic control of enemy infiltration. The fortress is also protected by a grandiose 20 meter high wall that surrounds the complex which was used as a safeguard by the Chachapoyas culture. The fortress’ main structures are its Main Entrance, East Wall, North Tower and 45 circular buildings.

The Alice Springs chef and culinary consultant has created an entirely new series of menus for Yasawa, combining ‘world foods’ with ‘wild foods’ drawn from Australia and the Pacific.

Indigenous Australian ingredients like kutjera (bush tomatoes), wattleseed and lemon myrtle are dished up alongside Pacific produce like rou-rou (Fijian spinach), casava and taro (native root vegetables).

They join Yasawa’s traditional specialties like the fresh tropical fruits grown throughout Fiji and the succulent seafood delivered daily to the resort by fishermen from the local villages.

BeachBooker Beach VillasWark is making his third visit to Yasawa as part of the resort’s guest chef program, which provides fresh inspiration and training for the local chefs. The posting brings the challenges of operating a five-star kitchen in one of the Pacific’s most isolated locations.

“I first came to central Australia to help launch the Alice Springs Convention Centre, so I’m familiar with the logistics of operating where certain types of produce aren’t always available or have to be flown in at irregular intervals,” Wark said. “But that’s what encouraged me to experiment with native ingredients and since then I’ve become a firm advocate of wild foods, wherever in the world they come from.”

At Yasawa Island Resort guests can now enjoy dishes like veal tenderloin mignons with yabbie tails and lemon myrtle hollandaise; grilled chicken breast crusted with wakha pukha dukha (a blend of sunflower seed, wattleseed and cummin) with wild wooded native mushrooms, rou rou, sweet vanilla risotto and chicken jus; wattleseed espresso ice cream with sambuca jelly shot and wattleseed biscotti; or iced dessert lime parfait with native honey, fig and saffron poached pears.

Wark operates his own culinary consultancy Walkabout and is a former hospitality lecturer from Charles Darwin University in Alice Springs. His past positions have included executive chef of the Alice Springs Convention Centre, executive sous chef at the Marriott Surfers Paradise, chef de cuisine at Melbourne’s Crown Casino and chef de cuisine at the Launceston Country Club Casino.

BeachBooker Beach VillasCoral Princess Cruises has extended discounts on its New Caledonian expeditions, offering luxury journeys to the territory’s most remote and unspoilt islands.

Sailing aboard the new Oceanic Princess, the seven-night cruises depart Nouméa in November and December for out-of-the way destinations that no other cruise lines visit.

The Oceanic Princess is an expedition-style cruise ship with just 36 staterooms. It provides all the comfort and facilities of larger cruise ships, but is small enough to reach reef and island sites inaccessible to other vessels.

Its schedule will take in the renowned Isle of Pines, the unspoilt Loyalty Islands group and the isle of Tanna in neighbouring Vanuatu with its active volcano.

New Caledonia Tourism Australian Manager Diane Moynihan said early booking discounts had been extended indefinitely, providing added incentive to explore New Caledonia by sea.

“New Caledonia is already an established cruise destination and a favourite on cruise itineraries from Australia and overseas,” Ms Moynihan said. “But now we have an opportunity to provide a fly-cruise experience just 2½ hours from Sydney, and one that reaches destinations that large ships don’t visit.”

The Oceanic Princess caters for no more than 72 guests and boasts a large sundeck and spa pool, reference library, lecture lounge, two cocktail bars, a boutique and dive shop.

It also has a purpose-built excursion vessel, Xplorer, and fleet of inflatable Zodiacs, allowing passengers a close-up look at the islets, coral reefs and spectacular landscape of New Caledonia.

Guests will be guided by naturalists and experts who will interpret the natural, cultural and historical highlights of New Caledonia.

Seven-night cruises aboard Oceanic Princess depart Nouméa on November 18 and 25 and December 2, 2006. They are available as fly-cruise packages from Air Calédonie Holidays, including return flights, airport transfers and taxes. Prices start from $3949 per person twin share from Sydney. The same package is available with an additional two nights at the five star Le Meridien Nouméa, priced from $4354 per person twin share from Sydney or $4284 from Brisbane.
