Introduces New Gastronomic Summer Menu with Finest Italian Seasonal Produce
Michelin-starred Chef Roland Schuller’s new à la carte menu includes a popular Italian Riviera summer specialty, pan-fried scallop topped by crispy foie gras, served with pumpkin and red onion (HK$178).
A novel Japanese-style bouillabaise seafood broth twins monkfish and gurnard from regional waters with Italian lobster and Mediterranean red prawn (HK$278).
Among new primi piatti pasta dishes is mascarpone ravioli with duck ragout and delicate red wine reduction (HK$178).
A new signature meat course is double veal chop with Jerusalem artichoke and an inspired Arabic coffee sauce (HK$358), complimenting gourmet favourites including Grade 9 Wagyu beef, roast pigeon, suckling pig, lamb rack and stuffed quail.
Chef Shuller’s renowned dessert menu is also enhanced by a spiced violet ice cream with almond olive oil cookies.
