MANRESA AND RELAIS & CHȂTEAUX ANNOUNCE “THE RESIDENCY” IN FRANCE
Joyeux Anniversaire! In celebration of Manresa’s 15-year anniversary, Executive Chef and Owner David Kinch is hosting “The Residency,” a collaboration with Relais & Châteaux and some of the most legendary culinary houses in France.
From September 28, 2017 to October 6, 2017, Chef Kinch will relocate his team from the three-Michelin star restaurant in Los Gatos, CA to France where they will take up residence in the city of Paris at the two-Michelin star Le Taillevent, in the countryside of Provence at the two-Michelin star L’Oustau de Baumanière, and near the beaches of Marseille at the three-Michelin star Le Petit Nice.
At each stop, the Manresa team will collaborate with the host chef and his team for a “four hands” dinner. Menus are already being planned with inspiration taken from local products of the respective French regions and the thoughtful “sense of place” from the California Coast that Manresa is known for.
“I’ve been inspired by the people, culture, ingredients, and cooking of France since the beginning of my career. It’s the place where I was first exposed to the ‘art of the table’ and ‘joie de vivre’ as a young cook, two philosophies that have since shaped my perspective in my chosen métier. For this reason, it makes sense to pay tribute to this country and its culture, which has influenced me in such positive ways, on the 15th anniversary of Manresa. It’s also an opportunity for me to share one of the most influential places in my career with my team at Manresa,” says Kinch.

September 28 and 29 at Le Taillevent** in Paris, France
To launch The Residency, Chef Kinch and his team collaborate with Alain Solivérès at Le Taillevent in the 8th Arrondissement in Paris. Originally opened in 1946, the iconic Le Taillevent is known for seamlessly combining classic and contemporary French cuisine. The restaurant’s exceptional wine collection includes over 2,000 wines and spirits from the Old and New World’s spanning more than 16 countries.

October 4 at L’Oustau de Baumanière** in Les Baux-de-Provence, France
Chef Kinch and his team move to the country house on the second leg of The Residency for a menu developed with Jean-André Charial. L’Oustau de Baumanière is the refined culinary destination at the estate of Baumanière, nestled in the rocky hills of Provence near vineyards and olive oil mills. A sought after retreat for over 40 years, the restaurant boasts its own vegetable garden and is renowned for its wine collection of over 60,000 bottles.

October 6 at Le Petit Nice*** in Marseille, France
For the final stop of The Residency, the Manresa team travels to the South of France for a lunch and a dinner with Gérald Passédat at the 100-year-old seaside restaurant, Le Petit Nice. Located in a charming, calm quarter of Marseille, Le Petit Nice was originally opened by Gérald Passédat’s grandfather Germain and served as a haven for painters, poets, and actors. With the bounty of the Mediterranean just steps away, Le Petit Nice is now known for its simplistic preparations of over sixty-five seasonal varieties of fish throughout the year.
